Spicy Chicken Quesadilla with Feta Cheese

Need a quick and easy dinner recipe for busy weeknights? Try this 10-Minute tasty, spicy chicken quesadilla recipe with feta cheese that’s healthy but doesn’t taste like health! This easy meal is filled with tasty healthy ingredients.

Ingredients:

  • ½ cup feta cheese
  • ¼ avocado
  • ½ cup greens
  • 1 small tomato
  • 3 garlic cloves
  • 1 cup shredded chicken
  • 1 tsp tomato paste
  • handful olives, pitted, chopped
  • 2 smaller tortillas
  • pickled jalapeno, sliced
  • black pepper

Instructions:
  1. Mash the feta cheese and avocado in a bowl. Mix in the chicken, greens (I used some arugula, mint and basil from the garden - but anything will work), tomato, garlic, pepper, tomato paste and olives.
  2. Spread 1/2 of the mixture on one half of a tortilla, top with jalapenos, then fold.
  3. Toast in a pan with olive oil until golden brown on both sides. Slice and enjoy.


Note: This recipe makes 2 servings and is recommended to serve with some salad or a sauce of choice. If you’re making these for the family make sure to double the recipe.
