GRILLED SPICY LIME SHRIMP WITH CREAMY AVOCADO CILANTRO SAUCE
The perfect meal for a hot summer day– spicy shrimp with a cool, creamy dip. This two-step entree pairs well with pretty much anything! Sautee your favorite veggies, whip up some zucchini pasta, throw them in a taco, or make it a bowl with rice and kale. This flavorful recipe will have your mouth watering before it hits the table!
INGREDIENTS
Grilled Shrimp
- shrimp peeled and deveined
- juice of 1 large lime
- olive oil for marinade
- 2 cloves garlic
- 1-2 tsp chili powder to taste
- 1-2 tsp cumin to taste
- 1-2 tsp paprika
- salt and pepper to taste
- dash of red pepper flakes
With marinade, you can go as strong as you like with any of these flavors. We recommend using your sense of smell to know when it's right for you!
Avocado Cilantro Sauce
- 1 cup Greek yogurt
- 1 avocado split and pitted
- 1 clove garlic minced
- juice of 1 lime
- 1-3 tsp chopped cilantro (to taste)
- salt and pepper to taste
INSTRUCTIONS
- Prepare Marinade: In a small bowl whisk together lime juice, olive oil, garlic, chili powder, cumin, paprika, salt, pepper, red pepper flakes. Pour into a resealable bag and add shrimp.
- Prep: Toss to coat and marinate for 30 minutes.Preheat the grill to medium heat.
- Grill Shrimp: Put the shrimp on skewers and place on the grill. Grill on each side for about two minutes or until no longer pink.
- Make Sauce: Combine avocado, greek yogurt, garlic, lime and cilantro. If you have it handy, pulse in a food processor until smooth. Add salt and pepper to taste. Serve immediately with shrimp.
